150 gm White mushrooms3 tsp Olive oil (or veg oil)1 no TomatoSalt (As reqd)3 tbsp Maida2 1/2 cups MilkBlack pepper (As reqd) Chop the mushrooms and tomato. :- The stem of mushroom can also be used in the soup.Heat olive oil in a pan.Saute the mushrooms till all the water in the mushroom evaporates.:- This takes only 1 or 2 minutes and you get the mushrooms with a concentrated earthy flavour which is excellent in soup.Sprinkle salt to the sauted mushrooms and keep aside.In a vessel, dry roast the maida till it turns slight brown.Add boiled milk slowly and stir well so that lumps are not formed.Stir till the mixture thickens to the desired consistency.Add the sauteed mushrooms and pepper.Add more salt if required. :- Serve hot.
