  • Idly Rice - 2 cups
  • Raw Rice - 1 cup
  • Urad dal - 1 cup
  • Fenugreek - 2 tsp
  • Ghee - 2 tblsp
  • Pepper - 1 tsp
  • Jeera - 1 tsp
  • Curry leaves(small) -
  • Coriander(small) -
  • Salt as needed -

Instructions
  1. Soak all these four Idly Rice, Raw Rice, Urad Dal, Fenugreek for 2 to 4 fours
  2. Grind all these four together in grinder
  3. Add salt while grinding. at last stage.
  4. Mix all in large vessel leave over night for fermentation.
  5. Take seasoning ingredients for tempering
  6. Pour into the batter and mix will.
  7. Take large idly vessel and grease oil.And pour the batter into the vessel
  8. Keep steamer and close lid and steam for 30 mins
  9. Take out from steamer and allow to cool for 10 mins.
  10. Cut idly with tumbler or any other. but i cut in regular idly mold.
  11. Now Kanchipuram idly is ready.
