Kafuli
Kafuli is a thick gravy preparation made from green leafy vegetables from the State of Uttaranchal. Kafuli made of
Spinach
leaves is the most common preparation.

spinach
/palak
½
bunch
fenugreek leaves
/methi
4-5
green chilies
2
tbsp
oil
preferably
mustard oil
4
to
cloves
,
garlic
3
cm
ginger
1
tsp
cumin seeds
/whole jeera
a pinch of asafetida /hing
½
tsp
coriander powder
/dhania powder
1
tsp
red chili powder
optional
¼
tsp
turmeric
/haldi powder
1
tbsp
rice flour
2
tbsp
curd
½
cup
water
1
tbsp
ghee
/ white butter
Salt
to taste
Instructions
Wash Palak and Methi in running
water
.
After washing, chop and boil both vegetables along with green chilies in ½ cup
water
till tender.
Mash into a paste using a blender.
Finely chop
ginger
and
garlic
.
Heat
oil
in a pan/kadai. Add
garlic
and
ginger
in the hot
oil
.
When the
garlic
turns light brown, add
cumin seeds
and asafetida.
Add mashed vegetables,
turmeric powder
, dry
coriander powder
, red chili powder and
salt
.
Add required amount of
water
to Kafuli and bring to boil.
Now add rice paste or rice powder dissolved in
water
and curd
Cover and cook for about 8 to 10 minutes on slow fire till the gravy is thick.
Garnish with pure
ghee
/white butter and serve hot with roti or steamed rice.
