  • Take a wide bowl and add eggs, sugar, salt and baking soda.
  • Beat with the help of a electric beater or with a whisk.
  • Add cardamom powder and beat again.
  • Now add Maida.
  • Next, add rava.
  • Add ghee.
  • Knead well with your hands. Add little more maida to make a soft dough.
  • Knead it for 4-5 minutes and keep it covered. Rest it for 10 minutes.
  • Divide the dough into 4-5 balls. Roll it like long strips like shown in the figure.
  • Make a slit on the side (lengthwise) with the help of a knife.
  • I did thick strips. Then cut those up into diamonds.
  • Heat oil in a pan and fry the cookies until golden brown, turning a few times during frying.
  • Set the flame low to medium while frying.
  • When done, strain off the fried cookies with a slotted spoon and allow excess oil to be absorbed on kitchen paper towels.
  • Once cooled well, store in an air tight container. Enjoy with a cup of hot tea.
