Keerai Mandi

Keerai mandi is an delightful recipe of chettinad. Mandi is nothing but the thick stock found in the under water when you soak the rice. This recipe is prepared by sparing that stock which is very healthy. When you don't get the stock we can take rice flour and dilute it as a substitute. This is an simple and wonderrful recipe in greens.

Ingredients
  

  • any greens 2 cups
  • mandi or diluted rice flour 1/2 cup
  • red chilli 2
  • cumin 1/2 sp
  • fenu grek 1/4 sp
  • shallots 1/2 cup
  • salt to taste

Instructions
 

  • in oil saute mustard, cumin, red chilli , fenu greek , onion and greens
  • add diluted rice flour or the water that remains after soaking rice.
  • let cook in mandi till soft
  • now add salt and serve with rice.
