Pavakka Thoran is a delicious traditional styled dish with a bitter flavor that goes well with hot rice. This is one of the easiest side dishes that can be prepared at home with minimum ingredients. Pavakka Thoran is uniquely prepared by blending the thinly chopped pavakka pieces with an aromatic coconut mixture and stir fried.   • Wash the bitter gourd and slice it open. Discard the seeds and pith. Slice the bitter gourd into thin pieces.
  • Heat oil in a pan, splutter mustard seeds and add chopped shallots and curry leaves. Saute for 5 minutes.
  • When it turns light brown in colour, add turmeric powder and salt. Stir in chopped pavakka pieces into the oil and mix well.
  • Grind grated coconut and green chillies into a coarse mixture and add to the bitter gourd. Do not stir. Close with a lid and cook in low flame,
  • After a few minutes, remove lid and combine well. Cook for another 2 minutes and remove pan from flame.
  • Serve the delicious thoran with rice.
