  • Wash the bitter gourd and slice it open. Discard the seeds and pith. Slice the bitter gourd into thin pieces.
  • Heat oil in a pan, splutter mustard seeds and add chopped shallots and curry leaves. Saute for 5 minutes.
  • When it turns light brown in colour, add turmeric powder and salt. Stir in chopped pavakka pieces into the oil and mix well.
  • Grind grated coconut and green chillies into a coarse mixture and add to the bitter gourd. Do not stir. Close with a lid and cook in low flame,
  • After a few minutes, remove lid and combine well. Cook for another 2 minutes and remove pan from flame.
  • Serve the delicious thoran with rice.
