Cheeda is a delicious South Indian snack made from rice powder. Cheeda is very popular and is usually prepared prepared for festive occasions like Gokulashtami. The tasty crunchy Seedai snack is also widely enjoyed as a tea time snack. Always note that while preparing the snack, water content should be nil. Otherwise there will bursting occur while deep frying. Coconut should be desiccated well before mixing of ingredients. This is one of the easiest of snack dishes that requires minimum effort. :- If using dessicated coconut, you can directly grind it. If using fresh coconut, which is tastier, first fry it in a pan, without oil, so that the water is evaporated. Water content should be nil.
Gently heat the rice powder in a pan or a kadai for about 4 mins.
When cooled, knead all the ingredients together and make small balls by rolling inside the palm gently.
Heat oil in a china dish and drop the balls one by one into hot boiling oil, Deep fry the balls to a light brown color on low fire. Do not overheat.
Drain and keep in airtight container when cool. Tasty snack is ready.
:- Do not use fresh coconut as such, without frying, because it may spurt when you drop in hot oil.
