Kerala Easy Vegetable Biriyani

Kerala Easy Vegetable Biriyani is one of the lightest and most soothing of all Biriyani dishes well enjoyed with a side dish of raitha, papad and pickle. Ingredients
  

  • 1 cup Rice soaked for 45 minutes and drained

Vegetables:-

  • 1 no Carrot thinly sliced - not grated, medium
  • Beans sliced
  • Cauliflower florets
  • or
  • Any available vegetable of your choice like peas, baby corn, etc. except tomatoes
  • 10 nos Garlic pods – 8 crushed, small
  • 3 tbsp Ghee or oil – 2
  • 1 tsp Garam masala powder or Biryani masala powder
  • 1 tbsp Lemon juice
  • Coriander and mint leaves chopped
  • 2 - Green chillies
  • Turmeric powder A pinch
  • Salt As reqd

Instructions
 

  • For preparing Kerala Easy Vegetable Biriyani, first take a pressure pan/cooker and add ghee/oil.
  • Add whole garam masala.
  • Add all the chopped vegetables, green chillies and garlic and saute for about 5 minutes.
  • Add coriander and mint leaves, turmeric powder and saute for another 2 minutes.
  • Add salt and 2 cups of water.
  • :- Since the rice already absorbed an equivalent of 1 cup water.
  • Allow it to boil.
  • When it starts to boil, add the drained rice and lemon juice.
  • Cover with the lid of pressure pan and put the weight on.
  • Cook on a very low flame for exactly 5 minutes.
  • Remove from flame and set aside.
  • Open the lid of the pan only after 15 minutes.
  • Garnish with fried onion, nuts, raisins and coriander leaves.
  • :- Serve hot with raita and pappadams.
