Kerala Egg Masala, a subtly spiced sauce with coconut and spices is one of the classic recipes of Kerala dishes. It goes well with Idiyappam, Appam etc.
Add the tomatoes and saute well till well blended.
Add the ground coconut mixture and saute well till oil come out of the mixture.
Add salt and little water and give it a good 5 minute boil. Stir in the boiled eggs. When gravy becomes thick, remove pan from flame. Kerala egg masala is ready. Enjoy.
