Kerala Egg Masala, a subtly spiced sauce with coconut and spices is one of the classic recipes of Kerala dishes. It goes well with Idiyappam, Appam etc.

Instructions
  1. For preparing kerala egg masala, first half the boiled eggs. Keep this aside.
  2. Grind together coconut, cumin seeds, chilly powder, coriander powder and turmeric powder.
  3. Heat oil in a kadai/wok and splutter mustard seeds. Add whole red chillies, curry leaves and fry.
  4. Then add the sliced onion, ginger, garlic and green chillies. Saute well.
  5. Add the tomatoes and saute well till well blended.
  6. Add the ground coconut mixture and saute well till oil come out of the mixture.
  7. Add salt and little water and give it a good 5 minute boil. Stir in the boiled eggs. When gravy becomes thick, remove pan from flame. Kerala egg masala is ready. Enjoy.
