Instructions
  1. Beat eggs in a bowl and set aside.
  2. Heat oil in a pan and splutter the mustard seeds.
  3. Add green chillies, shallots, ginger and curry leaves and sautT.
  4. Add the green tomatoes now, if you are using them, and sautT.
  5. :- I normally pick the green or unripe tomatoes from my garden. If you do not have access to it, then red should do fine as well or don¦t use tomatoes at all.
  6. Add the grated coconut and salt and sautT for a few seconds
  7. Lower the heat and add the prepared eggs and scramble it until it¦s done to your liking.
  8. :- If the eggs start sticking to the bottom just add a little more oil.
  9. :- I sometimes add some red chilli powder while I am scrambling the eggs for a spicier thoran. :- As always play around with the spices to suit your mood.

Really nice. Different egg thoran compared to our traditional one but still excellent..
