Kerala Potato Curry
Delicious Curry Good for Chappathis

Ingredients

Potatoes

Carrot

Onion
sliced lenghtwise

Turmeric powder

Green chillies
slit into half

nos
Tomatoes
chopped small
2
sprigs
Curry leaves
1/2
tsp
Mustard seeds
2
tsp
Oil
Salt
As reqd

cups
Water
Instructions
Peel the potatoes and cut into small cubes.
Heat a pressure cooker and pour 3 cups of
water
into it.
Add the potatoes,
carrot
, sliced
onion
, slit
green chillies
,
turmeric powder
and
salt
to taste to the pressure cooker.
Cover, put the weight and cook for 1 whistle.
Once the cooker cools, open and mash the potatoes well.
Heat
oil
in a kadai or pan.
Splutter the mustard.
Add the tomatoes and the
curry leaves
.
Cook the tomatoes very well.
Add the cooked potatoes.
Add little
water
if necessary.
Boil and cook for 6 - 8 mins.
:- Serve hot with chappatis or rotis.
