Instructions
  1. For preparing Kerala Potato Varutharacha Curry, heat oil in a kadai and splutter mustard seeds. When mustard splutters, add red chilly and stir for 2 minutes.
  2. Add tomato and onions to this and saute for 2 minutes. Add chopped potatoes and cook with sufficient salt until potatoes are done.
  3. In another kadai take little oil and fry grated coconut, coriander powder, chilli powder and turmeric powder. Saute for 5 minutes.
  4. Stir for 2 minutes until it changes to brown colour.
  5. Now grind in a mixer and keep aside.
  6. Add cooked potato curry with tamarind extract to ground coconut mixture and boil for 2 minutes until the gravy becomes thick.
  7. Now Kerala Potato Varutharacha Curry is ready to serve.
