Kerala Simple & Yummy Vegetable Biriyani Rice and vegetables in spices and coconut 1 cup Basmati rice2 nos OnionsMixed diced vegetables:-Peas, Carrots, Beans and Cauliflower (As reqd)1 inch Cinnamon (Karugapatta)2 nos Cloves (Grambu)3 nos Garlic pods1 no Bay leaf (Vazhana/Karuga ela)Marati Moggu (A small piece)2 tbsp OilSalt (As reqd)Cashewnuts (As reqd)For masala paste: Coriander leaves2 nos Garlic pods4 nos Green chillies1/4 cup Grated coconut Wash and soak rice for 10 minutes.Half cook all vegetables and keep aside.Heat oil in a pressure cooker.Add all spices, garlic and onions and fry till the onions becomes translucent.Mix ground masala paste and cooked vegetables and fry till a good flavour comes.Add rice and 2 cups of water(boiling water) along with salt.Cover the lid and pressure cook for 10-12 minutes in low flame.Garnish with fried cashewnuts. Vegie biriyani made without tomato tasted really delicious. Thanks for sharing this recipe. Keep posting more recipes that doesn`t require tomato.
