Kerala Tasty Chicken Curry Kerala style with coconut milk and fried coconut 1 kg Chicken4 nos Onions (finely sliced)Ginger (garlic paste - 2 tbsp)2 nos Tomato (chopped)2 nos Green chillies2 1/2 tsp Coriander powder1 1/2 tsp Chilly powder1 tsp Garam masala powder1 cup Thin coconut milk1 cup Thick coconut milkCurry leaves (A few)Oil (As reqd)Salt (As reqd)For tempering:-Mustard seedsDried red chilliesChopped small onionsCurry leaves Grind together all the ingredients for coconut mixture.Heat oil in a pan.Add onion, ginger-garlic paste, green chillies and curry leaves and fry till brown.Add tomatoes and fry till oil is visible.Add coriander powder, chilly powder and garam masala powder and saute for few minutes.Add cleaned chicken, salt and mix well.Add thin coconut milk and cook till the chicken is done.Mix the ground coconut mixture and bring to boil.Add thick coconut milk.Add the tempering with mustard seeds, dried red chillies, chopped small onions and curry leaves. I have tried this couple of times it tastes very good and delicious. This can be had with Paratha (Malabar paratha frozen is available) White Basmati Rice, Naan, Chappathi etc. The best part is Coconut (the main Kerala flavor)
