Kerala Uzhunnu Vada
Uzhunnu Vada is a popular snack in Kerala cuisine very enjoyable with a cup of hot tea. The delicious snack can also be accommodated as a breakfast dish too with chutney and hot sambar. Counted as nutritious and light on the stomach, the ground black gram mixture is pressed into soft rounds on the palm. Care has to be taken while grinding black gram or urad dal. The batter should be a bit coarse and not watery. These Uzhunnu Vadas are fried in hot boiling oil and served immediately. Soft on the inside and crispy on the outside, Uzhunnu vadas are tasty delights both for young as well as old. Treated as a traditional snack, it is very easy to prepare and a favorite with all. Instructions
  1. Soak black gram with raw rice and pepper for 4 hrs.
  2. Cut green chillies, ginger, coriander leaves and curry leaves into very small pieces.
  3. Grind black gram with as much less water as possible.
  4. Add salt and asafoetida while grinding.
  5. :- The batter should be too thick to stick on hands. The blackgram should not be ground too nicely. It should be a little rough.
  6. Remove the batter into a bowl and add chopped green chillies, ginger, peppercorns, coriander leaves and curry leaves.
  7. Heat oil in a fry pan.
  8. Apply cold water on your left hand and put a little batter of the size of a lemon on it.
  9. Press it softly to get a flat round shape.
  10. Make a hole in the middle with wet finger.
  11. Place them in the hot oil and deep fry.
  12. Repeat the procedure for the remaining batter.
  13. :- Serve kerala uzhunnu vada with sambar or chutney.
  14. :- If the hands are dry, the batter will stick on to your hands. So make sure your hands and fingers are wet.
Recipe Notes

Uzhunnu Vada is incomplete without Kerala Sambar and Kerala Coconut Chutney made of dry red chillies. In kerala Idli will be the usual combination for Uzhunnu Vada.  You can also visit this link Keerai Vada.

i tried it.good.but it turned out to b a bit hard.any idea how to make it soft.I`ve used sunflower oil. is that d reason?
