Kesar-Pista Kulfi With Malai Ice cream 100 gm Khoya1 1/2 glasses Milk125 gm Cream (beaten)10 strands Saffron10 nos Almonds10 nos Cardamom (Elakka)10 nos Pistachios1 tbsp Kewra essence1 tbsp Corn flourFor Malai:-1/2 ltr MilkSugar (As reqd) Heat milk and add the khoya.Keep stirring on low heat.Mix corn flour in 5 tbsp of water and add to milk mixture.Keep stirring till the milk mixture is reduced to half.Soak saffron in 2 tbsp milk and add to the milk mixture.Add almonds, pistachios and the essence.Add the powdered cardamoms and add the beaten cream.Blend the mixture well and fill into chilled kulfi moulds.For malai, boil milk in a thick bottomed vessel and allow cream to form keep stirring occasionally to prevent milk from boiling over. Add 2 - 3 strands of crushed saffron, keep boiling till milk become every thick and creamy.Before serving, dip each kulfi moulds in water and turns out into serving dish, pour malai on top and garnish with chopped nuts.
