Kothamarakka Kondaattam is a delicious stir fry prepared with cluster beans. It is noted that Kothamarakka / Cluster Beans is a nutritious vegetable that can be used for preparing a variety of dishes. So, I thought to make some Kondaattam with Kothamarakka and found it very tasty and easy to prepare. I am sharing this recipe with my friends and well-wishers with a hope that they will enjoy it. This is an easy to prepare stir fry with spices and herbs. Cluster beans or kothamarakka is native to India and the green vegetable requires a warm and dry atmosphere. Cluster beans is known by different names: guar, gavar or gavar beans. These veggies are distinct in taste and flavor and it can never be compared to any vegetable. They are comparatively hard too compared to french beans. Hence these veggies require precooking before being stir fried. For preparing Kothamarakka Kondaattam, cluster beans are cooked with required spices and salt, dried in sunshine for 3 days and then stir fried.

Cluster beans are healthy and nutritious. Cluster beans contains reasonable amounts of protein, phosphorus and calcium. It reduces cholesterol and helps achieve proper blood sugar targets. However kids are not fond of the distinct flavor of cluster beans. Its a favorite with elders. Cleaning of cluster beans by removing the threads require some attention. It is healthy to include Cluster Beans Kondaattam in your menu. Include healthy veggies in your daily diet. This is one of the easiest dishes with limited ingredients that can be prepared at home.   • Clean and cut the Kothamarakka (Cluster Beans) into medium sized and keep aside.
  • Take about 1-2 cups of normal water in a cooking vessel. Add red chilli powder, turmeric powder and required quantity of salt and stir it well.
  • Change the Kothamarakka pieces into this water and stir it well.
  • Cover the cooking vessel with a plate and cook the Kothamarakka pieces properly in medium flame.
  • After about 15 minutes, remove the plate, stir the mix further and allow to dry the water in low flame.
  • After drying the water, change the cooked/boiled Kotthamarakka pieces into a clean cloth/sheet and dry it further in sunshine (it may take 2 - 3 days to get the pieces dried properly).
  • After the Kothamarakka pieces are dried well and properly, store the kondaattams in an air tight container. Kothamarakka Kondaattam is ready.
  • Whenever it is required, heat oil in a cheenachatti/frying pan, take required quantity of Kondaattam and fry them in the hot oil.
  • When the Kondaattam is fried properly, take them out from the cheenachatti/frying pan and serve the hot Kondaattams as side dish for lunch/dinner.
