Kovakkai (Ivy gourd) Fry is a delicious Indian recipe served as a Side Dish normally served with hot boiled rice. This is a spicy fry where the kovakkai is marinated with the spices and deeply fried in oil.

Instructions
Clean, Wash and cut the Kovakkai (Ivy gourd) in round shape (as shown in above picture).
Add Sambar Powder and Salt into the Kovakkai pieces and mix it well and keep it aside to coat the masala on the pieces properly.
Heat Oil in a frying pan/Cheenachatty. Then put the masala (prepared with Sambar Powder and Salt) coated Kovakkai (Ivy gourd) pieces into the hot Oil and stir it occasionally.
When the colour of Kovakkai pieces turns into brown, take the pieces out from the frying pan/Cheenachatty (by using a Sieve) and keep them in a plate and serve
