Instructions
  1. Cut bottom from stalks and discard. Remove any loose outer layer and upper end, if it is brown or dry. Wash and dry.
  2. Cut stalks into one- to two-inch lengths and julienne.
  3. Set julienned strips on a flat plate or basket in a warm dry place for a week or more to dry.
  4. To brew, take a loose handful of lemon grass and place in a saucepan with two cups of water.
  5. Bring to a boil.
  6. Simmer for 12 - 15 mins.
  7. Strain into a kettle.
  8. :- Serve hot.

Very nice
You can also try this with the leaves of fresh lemongrass, which gives it a slightly different taste
