Lime Rice In Kerala Style

A variety dish prepared by mixing white rice with lime

Ingredients
  

  • 1 cup Rice Basmati/any other superior white rice
  • 2 nos Lime squeezed
  • 1/4 tsp Turmeric powder
  • 3 tbsp Ground nuts roasted, Nilakkadala parippu
  • 2 nos Green chillies sliced roundly
  • 1small piece Ginger chopped
  • 1/2 tsp Asafoetida powder Kayam
  • Coriander leaves Few

For frying:

Instructions
 

  • Cook rice in sufficient water and after proper draining spread out on a white cloth.
  • Heat oil in a pan and crackle mustard seeds. Add cummin seeds, black gram, bengal gram, red chillies and sufficient curry leaves.
  • Saute in low heat and add green chillies, chopped ginger and ground nuts.
  • After frying for some time, add turmeric powder and cooked rice . Keep mixing and sprinkle asafoetida powder and sufficient salt.
  • Remove the pan from fire and add lime juice. Mix and serve.
  • Lime rice is ready and garnish with chopped coriander leaves.
  • Tips:- 1)Roasted ground nuts are available in shops and you can buy them.
  • Lime rice is recommended for long journeys due to its lasting.
