Longbeans Theeyal Longbeans in fried coconut curry 1/2 kg Long beans2 cups Grated coconut1 tbsp Chilly powder1/4 tbsp Coriander powderFenugreek powder (A pinch, Uluva)15 nos Small onions (cut lengthwise, Kunjulli)6 nos Green chilliesTamarind (soaked in 1/2 cup of water, Puli)Salt (As reqd)1/4 tsp Turmeric powder2 tbsp Coconut oil1 tsp Mustard seeds2 sprigs Curry leaves Heat up a pan or a kadai.Add coconut and fry, till they turn brown.Add chilly powder, coriander powder and fenugreek powder.Fry, till you get rid of the raw smell.Grind it into a fine paste.Cook beans in 1 cup of water along with salt and turmeric powder. Add tamarind juice.Add the ground coconut mixture, small onions and green chillies.Cook, till the desired consistency is reached.:- It should neither be too watery nor too thick.Heat oil in a small pan.Splutter mustard seeds and curry leaves.Pour the above seasoning into the curry and mix well.
