Lololikka Achar is a pickle prepared with the red cranberry. Pickles are an important delicacy present in almost all parts of the world. Lololikkas or loobikkas are abundant during summer season and you can prepare pickles and relish with noon day meals. Authentic Lololikka Achar or Pickle is mixed with an infusion of mustard oil, fenugreek and other spices. Lololikka Pickle is the best combo with curd rice. Keralites always relish spicy, hot pickles or achars, especially during lunch and dinner. Lololikkas are nutritious too, rich in vitamins, minerals and a power house of anti oxidants too. The slightly sweet and basically tangy nature of cranberries holds a distinct flavor and is branded a favorite with rice gruel too. Lololikkas are very prevalent in Kerala and you will notice at least one tree in almost all homes.
Add one cup of water into this mix and add the cleaned Loobika, Vinegar and Asafoetida powder also and stir it well. Cook the mix in low flame till the water redues in the Achhaar.
Loobikka (Scram Berry) Achhaar is ready. This Achhaar can be served with Poori/Parotha/Cooked Rice etc. If this Achhaar is stored in an air tight container in fridge, it can be used for more days.
