For preparing mangalore goli baje, mix together all the ingredients: maida, curd, ginger, green chillies, besan, curry leaves, asafoetida, baking soda and required salt into a smooth dough.
Take care that the dough does not become too thin or thick.
Leave the dough aside for 30 minutes.
Pluck out small balls from the entire dough.
Heat oil in a frying pan and drop the goli baje into hot oil.
Deep fry until golden brown in color.
