Mango-Carrot Pickle Instant pickle with mango and carrot 2 cups Raw mango (cut into 1" long thin pieces)1 cup Carrot (2 cups needed if the mango is too sour, cut into 1" long thin pieces)1/2 cup Green chillies(split) (medium)2 tbsp Ginger (finely chopped)3 stems Curry leaves1 tsp Fenugreek (Uluva)1 tsp Mustard seedsSalt (As reqd)1 tbsp Gingelly oil Mix the carrot, mango and salt together.Heat the oil in a pan or a kadai.Splutter mustard seeds and add fenugreek.
