1/2 cup Meethi keerai2 nos Eggs2 - Lemon juice1 no Onion (small)1 no Green chilly (chopped)4 - Curry leaves10 - Coriander leaves (a handful)Oil (As reqd)Salt (As reqd)Any reminaing veg masala like:-Cauliflower poriyalBroccoli fryMushroom fryBeans thoranCabbage thoranIf you dont have, then you can just enjoy with the methi leaves. it taste great. Heat 2 - 3 tsp of oil in a pan or a kadai.Add the onions and chilly and fry well.Add any veg masala remaining and stir well. Once they are hot, add the eggs.:- Make sure the heat is at high for 2 - 3 mins so that egg will cook faster and mix well with the veg. Then reduce the heat to medium.Add the methi leaves and stir it for 2 - 3 mins until they shrink.Add in pepper and salt as per your need.Finally top it with coriander leaves, curry leaves and lemon juice. :- Serve hot with chappathi or bread /pita bread.NB: You will not like to part this from your plate to anyone..i bet!!BON APPETITE!!
