Masala Omelette -lightly spiced with cheese and mushroom

Ingredients
  

  • 2 nos Eggs beaten
  • 1/2 Onion chopped fine
  • 1 no Tomato cored,seeded and chopped fine
  • 1 no Green Chilly sliced finely
  • 1/2 tsp Ginger chopped fine
  • 4-5 nos Button Mushrooms sliced
  • 2 tsp Cheese grated
  • 4-5 leaves Curry leaves finely chopped
  • 1/4 tsp Black pepper
  • Salt As reqd
  • Oil for cooking

Instructions
 

  • heat oil in a pan, add onion, ginger,green chillies, curry leaves, tomatoes and mushrooms. Mix well.
  • Cook on medium heat for about 5 minutes till the vegetables are tender. Add salt and pepper to season.
  • Heat oil in a flat pan. Add the beaten eggs and swirl the pan so that the egg fills the pan.
  • Cook till underside is almost golden brown. Flip over and add the vegetable mix and sprinkle cheese over the egg.
  • When set, fold over and transfer to a serving plate.
  • Masala omelet is ready and is ideal for breakfast along with bread.
