Methi Rice Easy

  • Heat 1/2 tbsp of oil in a pan.
  • Fry Bengal gram, black gram, cinnamon, red chillies, coriander seeds, cardamom and 1 tsp of cumin seeds until they turn golden brown.
  • Switch off the stove and let this cool for a while.
  • After cooling, grind it into a fine powder and keep aside.
  • Cook rice with 6 cups of water.
  • Add ghee to that rice and cool it. Keep it aside.
  • Heat 1 1/2 tbsp of oil in a pan.
  • Splutter mustard seeds and the 1/2 tsp of cumin seeds.
  • Add the fried cashews and onions and saute until onions turn golden brown.
  • Add the chopped methi leaves and fry until it leaves the raw smell of the methi leaves and nice aroma comes.
  • Add ginger-garlic paste, salt and turmeric powder and saute for 1 more minute.
  • Finally add the spicy daal powder from step(2-4) and switch off the stove.
  • Mix it well with the rice.
  • :- Serve hot with raitha.
