Minapa Vadiyalu With Vegetables
Minapa Vadiyalu are sun dried, some what round puffy balls made up of
black gram
. Available in grocery shops but home made vadiyalu are the best

Coconut
slices
2 inch size

cup
Onion
pieces
1
cup
Tomato
pieces
1
tsp
Red chilly powder
6
nos
Green chillies
half split
1
tsp
Mustard seeds
1/2
tsp
Turmeric powder
Ginger
garlic
paste - 1 tsp
1
tsp
Coriander seed powder
200
ml
Refined
oil
Salt
As reqd

cup
Coriander leaves
Instructions
Cut all the vegetables to desired sizes. Soak the
brinjal
and
potato
pieces in
water
.
Add some
oil
to a frying pan and heat. Add the vadiyalu and fry till they become reddish brown in color. Keep them in a plate.
Heat remaining
oil
in the pan and fry the
onion
pieces until they turn brown.
Add the
mustard seeds
,
turmeric powder
,
coriander powder
,
ginger
-
garlic
paste, half split
green chillies
,
tomato
pieces and fry till
oil
shows up and the
tomato
pieces become smooth.
Now add the
coconut
slices, vegetable pieces, red chilly powder, sufficient
salt
and fry.
Add the fried vadiyalu also and stir well. Add 2 cups of
water
and simmer in low flame until all the ingredients are well cooked.
Spread finely chopped coriander leaves on the top and serve hot with rice.
