Instructions
  1. Heat oil in a pan.
  2. Add jeera, chopped onions and green chillies and stir fry them.
  3. Add turmeric powder, coriander powder and mix well.
  4. Add all vegetables and water as required. Mix them.
  5. Add a cup of milk to this and close the pan with a lid.
  6. Let it boil.
  7. Once it starts boiling, add garam masala and stir for 5 secs.
  8. Close the lid again and reduce the heat.
  9. Cook until all vegetables are boiled.
  10. Once the water milk mixture reduces, you may take it out if you need gravy, or wait until the curry is dried up.
  11. :- Dont dry it up completely.
  12. Mix well before serving.
  13. :- If you have cooked rice, mix the rice with this curry in the pan itself. Believe me, your friends will ask, is this a new type of Biriyani?
  14. :- This curry has proven to be the best combination for chappathis.

Anyhow its really good with chappathi roti appam.

Like another user had noted this gave an alternative to the predominantly coconut based mixed vegetable recipes. Goes very well with nan.

Thanks
