Mixed Vegetable Rice Mixed vegetable rice 2 cups Rice1 no Carrot (cut into small pieces)4 - French Beans (cut into small pieces)2 nos Potatoes (boiled & mashed)1 cup Ghiya (finely chopped)½ cup Peas4 nos Tomatoes (finely chopped)2 nos Onions (finely chopped)2 tbsp Oil1 tsp Mustard seeds8 - Curry leaves4 - Dry red chillies (Kollamulaku)½ tsp Bengal gram (Kadalaparippu)½ tsp Black gram (Uzhunnuparippu)½ cup Groundnuts1 cup Tamarind water2 tbsp Sambar Masala Powder1 tsp Red Chilly Powder½ tsp Sugar½ tsp Turmeric powderSalt (As reqd)Asafoetida (A pinch, Kayam)Coriander leaves (finely chopped) Boil rice in the normal way.Heat oil in a pan or a kadai.Add mustard seeds, curry leaves, asafoetida, Bengal gram and black gram and red chillies.Add groundnuts and fry for about a minute. Put all the vegetables (except tomatoes and mashed potatoes) along with little water. Cook it for 5-7 minutes till half done. Add tomatoes and cook further for about a minute. Add mashed potatoes, salt, turmeric powder, sambar powder, tamarind water and sugar. Add boiled rice and mix well. Cover it with a lid and simmer for 5-7 minutes. The rice should not get too dry. Sprinkle chopped coriander leaves. :- Serve hot. North Indian
