Instructions
  1. Heat 3 tbsp oil in wide pan.
  2. Cut onion length wise and chop green chillies and tomatoes.
  3. Fry onion well until become light brown.
  4. Add green chillies, ginger-garlic paste, chopped coriander and curry leaves.
  5. Fry it well.
  6. Add tomatoes.
  7. Fry it with coriander powder.
  8. Make layered paotta into small pieces.
  9. Mix the parotta with the above masala gravy.
  10. Beat the egg with salt and pepper.
  11. Pour the egg mixture to parotta mixed masala.
  12. Keep frying, until egg cooks well.
  13. Garnish with little coriander leaves.

I HAD IT ONCE FROM A HIGHWAY DHABA IN KANNANUR ON PALAKKAD – THRISSUR HIGHWAY. BUT NEVER KNEW THE RECIPE. TRIED IT AND IT WAS EXCELLENT!! THANKS.
