Mutton Ghee Roast is very famous and authentic recipe of mangalore. This recipe is delicous and yummy to have with rice and rotis and parotta. We have to two few procedure to this recipe. First we have to marinate for few hours, so we get juicy and tendering mutton for cooking . For this mutton ghee roast we need fresh mutton and that too with bone pieces too. Because this mutton bones more taste in this recipe while boiling the juicy comes out from mutton. After marinate we roast few ingredients to and grind to make fine paste. this both combine to cook final we get mutton ghee roast. In this recipe we use more ghee and gives mores taste and different aroma and makes more richness of this recipe. Mutton is very fatty meat and makes delicious taste when we cook. This mangalorain recipe they add tamarind. Few people do this with tamarind water in boiling of mutton and few people cook this tamarind in roasting ingredients and make a paste for this recipe.   • Onion(chopped) - 1 no
For marination
  • Red chili powder - 1 tsp
  • Salt - 1/2 tsp
  • Curd - 1/4 cup
  • Lemon juice - 1/2 tsp
  • termeric - 1/4 tsp
For Roasting
  • Coriander seed - 1 tbsp
  • Red chilli(can adjust as per spice) - 8 no
  • Tamarind - 1 piece
  • Black pepper - 1 tsp
  • Funnel seed - 1/2 tsp
  • Cumin seed - 1 tsp
  • garlic - 2 no
  • Cardamon - 1 no
  • Cloves - 2 no
  • Cinammon - 1 no
  • Fenugreek - 1/4 tsp
for tempering

Instructions
  1. Wash the mutton and add all marination and marinate for 1 hour. You can increase the time. But minimum 1 hr
  2. Heat cooker / pressure pan add ghee 2 tsp and add ginger garlic paste saute well
  3. Now add marinated mutton add 1/4 cup water cook for 4 whistle.
  4. Now take fry pan and roast all ingredients which mentioned above roast and turn off
  5. Allow to cool and grind fine paste,
  6. Now remove pressure from the pan separate water and mutton
  7. Now heat the pan add balance ghee
  8. Now add onion and saute till raw smell goes and turn into pink color
  9. Now add the grind paste saute well in ghee for 2 mins add salt as you need
  10. Now add mutton saute well and roast still the water absorb and ghee comes out
  11. Now add curry leaves and turn off the flame
  12. Now you Mutton Ghee Roast ready
