Mutton Liver Fry - Kerala Style

Ingredients

Mutton liver
1

Onion

Ginger
garlic
paste - 1 tbsp
For Marination
2
tsp
Chilly powder
1
tsp
Black
pepper powder
2
tsp
Garam Masala
powder
1
tsp
Coriander powder
1/4
tsp
Turmeric powder
2
tbsp
Coconut Oil
preferred
1
sprig
Curry leaves
Instructions
Marinate the cleaned liver pieces with all the powders and
salt
for at least half an hour.
Heat a thick-bottomed vessel, add
oil
and saute onions and
curry leaves
.
After it turns translucent, add
ginger
-
garlic
paste and fry till the fresh smell is gone.
Add the marinated liver pieces to the pan and cook covered for 5 minutes.
After all the
water
has dried up, add more
oil
if needed.
Fry stirring in between, also check the level of
salt
. :-Do not fry for more than 5-10 mins or else liver would turn hard.
