Mutton Rendang Den Den

A spicy mutton curry

Ingredients
  

  • 500 gm Mutton cut into chunks
  • 3/4 cup Oil
  • 3 stalks Lemon grass bruised
  • 2 1/2 cm Galingale

For seasoning:

  • 1 tbsp Vinegar
  • or
  • 1 tbsp Lime juice
  • 4 tbsp Sugar
  • 1/2 tbsp Salt
  • Thick black soy sauce A few drops

Instructions
 

  • Cook mutton chunks in 2 cups of water for 20 minutes.
  • Remove the chunks and cut into thick slice across the grain.
  • Heat oil and stir-fry the mutton slices.
  • Dish out and drain well.
  • Reheat the pan with 3 tbsp of oil and fry galingale and lemon grass.
  • Add ground ingredients and fry for a few minutes until fragrant and oil separates.
  • Put in a cook meat and chicken stock and mix well.
  • Bring to a boil.
  • Lower the heat and simmer for 20 minutes, until mutton is tender and gravy is thick.
  • Add seasoning.
  • :- Serve with white rice or bread.

    According to the dish name “Rendang” I thought it is an Indonesian recipe (I am an Indonesian). We have a dish named Rendang and we usually prepared it with beef not mutton… with a lot of coconut milk. So I think this mot not Indonesian Rendang, isn`t it..?
