Ingredients
  • Mutton(cut into chunks) - 500 gm
  • Oil - 3/4 cup
  • Lemon grass(bruised) - 3 stalks
  • Galingale - 2 1/2 cm
For seasoning:
  • Vinegar - 1 tbsp
  • or -
  • Lime juice - 1 tbsp
  • Sugar - 4 tbsp
  • Salt - 1/2 tbsp
  • Thick black soy sauce(A few drops) -

Instructions
  1. Cook mutton chunks in 2 cups of water for 20 minutes.
  2. Remove the chunks and cut into thick slice across the grain.
  3. Heat oil and stir-fry the mutton slices.
  4. Dish out and drain well.
  5. Reheat the pan with 3 tbsp of oil and fry galingale and lemon grass.
  6. Add ground ingredients and fry for a few minutes until fragrant and oil separates.
  7. Put in a cook meat and chicken stock and mix well.
  8. Bring to a boil.
  9. Lower the heat and simmer for 20 minutes, until mutton is tender and gravy is thick.
  10. Add seasoning.
  11. :- Serve with white rice or bread.

According to the dish name “Rendang” I thought it is an Indonesian recipe (I am an Indonesian). We have a dish named Rendang and we usually prepared it with beef not mutton… with a lot of coconut milk. So I think this mot not Indonesian Rendang, isn`t it..?
