Nadan Mutton Roast is a delicious roasted mutton dish that pairs well with Appam, Parotta, Roti as well as rice. Mutton pieces are combined with a spicy chilly mixture and cooked in a pressure cooker until done. The cooked mutton pieces are slow roasted in sufficient oil to a dark brown color with rich aroma and flavor. The lip smacking dish can be easily prepared at home. These roasted mutton chunks are sautéed with onions and green chilies. Now you can sense a nostalgic ‘Thattukada’ flavor engulfing you and I bet Nadan Mutton Roast is never enough. The crispy and super delicious mutton fry can even be served as a starter dish or as sides. We have included a simplified version of Nadan kerala Mutton Roast. This mutton roast cooked in a masala style with onions, tomatoes, fresh pepper corns, ginger, garlic and embedded in the masalas . The Kashmiri chilly powder gives the bright red colour to the gravy, it is less spicy too. But it is optional. The process is fairly simple and I have included step by step instructions to make Kerala Mutton Roast recipe in the post. Instructions
  1. In a pressure cooker, add mutton,turmeric powder,chilli powder, pepper powder,ginger garlic paste and salt, mix well, and cook for 4-5 whistle.Turn off the heat and let the pressure release on its own.
  2. In s kadai add oil ,add curry leaves,green chilies,and ginger garlic paste, sauté until raw smell goes.
  3. Add shallots and onion , sauté till the onion gets soften and golden brown.( add some salt)
  4. Add chilli powder, coriander powder, garam masala and pepper powder, saute well for 2 minutes.
  5. Add tomato, mix well , cover the kadai with a lid, and leave until the tomato gets thoroughly cooked.
  6. Add cooked mutton in it, and sauté well for minutes.
  7. Cook till the mutton is roasted nicely and is dark in color. You can also add oil , salt , pepper or masala in between if needed.
  8. Super delicious mutton roast is ready to serve with chapathi , Parotta etc....
