Nadan Special Uzhunnu Vada is a tasty snack that goes well and is a special delight with a cup of hot tea. Soft in the inside and crispy on the outside, Nadan Special Uzhunnu Vada is greatly relished by people of South India. Very light on your tummy and nutritious to the core, these vadas go well with chutney and hot sambar. The black gram mixture is pressed into small rounds in your palm and deep fried in hot oil to a crispy brown color. The batter should not be watery but should be coarse. Add chopped onions, chilies, peppercorns, ginger chopped, salt, baking soda to this batter and mix well.
Mix well properly. Add 1 spoon rice powder to this and mix well for getting crispiness to vada.
Keep a cup of water near by and wet the hands to prevent sticking of batter. Make round balls with palm and press gently. With finger we have to make a hole in center.
Heat oil in a kadai and drop the round shaped batter to hot oil. Fry them for 5 minutes until it becomes golden brown.
When this vada become brown in color it is ready to take from oil.
