North Indian Tasty Mutton Biriyani Combination of rice, mutton n spices 4 cups Basmati Rice1 kg Mutton1 cup Curd (Thayiru)2 cups Onion2 nos Tomatoes1 cup Coriander leaves1 cup Mint Leaves (Pudhina)1 inch Ginger1 no Garlic pods (big)1 cup Oil3 nos Cloves (Grambu)3 nos Cardamom (Elakka)2 sticks Cinnamon (Karugapatta)1 tsp Turmeric powder2 tsp Cumin powder (Jeerakam)2 tsp Coriander powder1 tsp Chilly powder6 nos ChilliesSalt (As reqd) For Masala: 1)Grind ginger, garlic, mint and coriander leaves to a fine paste along with yogurt/curd.For Biryani: 1)Wash the rice and meat pieces.Heat oil in a pan and fry all the spices, green chillies and onions till they turn golden brown.Add the ground masala paste and finely chopped tomatoes till they are well cooked.Add the washed meat and water.When it starts to boil, add salt along with turmeric powder and chilly powder.Add the rice and allow it to cook for about 15 minutes.For Dhum: 1)Cover the half cooked biryani and over this keep red hot coal for about 20 minutes.
