Olan Curry Using Kumbalanga
Kerala style curry using Kumbalanga

Ingredients

Kumbalanga
finely sliced

Green chillies
slit
Salt
As reqd
1
cup
Thick
coconut
milk
1st extract
1 1/2
cups
Thin
coconut
milk
2nd extract
1
tsp
Mustard seeds
Curry leaves
2
tsp
Oil
Instructions
Mix together kumbalanga,
green chillies
and
salt
along with second extract of
coconut
milk
and cook well.
When it comes to a boil, add the first extract of
coconut
milk
and boil for 3-5 minutes.
Heat
oil
in a pan.
Add
mustard seeds
and when they crackle, add
curry leaves
.
Add the above seasoning into the boiling curry.
Simmer for 1 or 2 minutes and remove from heat.
:- You can add chilly powder(1/2 tsp) instead of
green chillies
and also
turmeric
to get another version.This has to be done while first stage of cooking, that is before adding second extract of
coconut
milk
.
