Orange Marmalade
Orange
marmalade is prepared by combining
orange
juice with fresh
orange
rind

strain to remove seeds etc
Fresh

rind
Rind of two oranges
1/2

Orange
essence
1/2
tsp
Citric acid
1 1/2
cup
Sugar
Instructions
For preparing
orange
marmalade, cut off the rind of two oranges with a sharp knife. Do not penetrate deep since the white will be exposed.
Slice the
orange
rind into long, thin strips and soak overnight in enough
water
.
Next day, discard the soaked
water
and pour enough
water
into the
orange
rind.
Boil the
water
and cook for 45 minutes in medium heat until the rind is done.(You can also use pressure cooker to cook the rind)
Take a vessel and stir in
sugar
. Add
orange
juice, citric acid, cooked
orange
rind and remaining
water
.
Stir well and boil the mixture.
When a one string consistency is achieved, remove
orange
marmalade from fire and add
orange
essence. Stir gently.
Allow
orange
marmalade to cool well and pour in a glass jar with a tight lid.
Orange
marmalade, a favorite spread for bread and cheese, is ready.
