Orange Pulao Pulao made with sweetlime juice & coconut milk 2 cups Basmathi rice (soaked in water for half an hr)1 cup Orange juice (sweetlime variety) preferably without suga)1 cup Coconut milk1 cup Peas2 nos Onion (sliced)Ginger (garlic paste - 1 tbsp)10 - Green chillies (slit)Food color (Red or orange)Coriander leaves (As reqd)Salt (As reqd)2 cups Water3 tbsp Oil & gheeRaw masalas:-2 - Cardamom (Elakka)2 - Cinnamon (Karugapatta)2 - Cloves (Grambu)2 - Bay leaves (Karuga/Vazhana ela)For raitha: (side dish)Cabbage(chopped)Capsicum(chopped)1/3 tsp Pepper powder1/3 tsp Cumin powder (Jeerakam)Sa lt (As reqd)Curd (As reqd) Pour oil & ghee in a kadai or cooker.Put all the raw masala items and fry them.Add sliced onions, ginger-garlic paste and green chillies and saute for a while.Add washed rice and give a gentle mix.Add coconut milk (normal milk not thick nor thin), sweetlime juice and water according to the given measurement only.Add the food color and salt.Allow it to boil nicely.Simmer the stove and keep upto 2 whistles.Open the lid and wait until the steam gets off and then, give a mix.For making raitha:- 1)Fry both cabbage and capsicum.Remove it from stove and add pepper and cumin powders.Add salt and curd.Give a mix.:- Serve pulao with raitha.
