Palak Paneer is a North Indian dish served with roti, chappathi or naan. ‘Palak’ is the term used for spinach. ‘Paneer’ is the term for cottage cheese. Ingredients
  

  • 1 Bunch Palak Spinach
  • 200 g Paneer
  • 2 Nos Green chili
  • 2 Tbsp Butter
  • 2 Tsp Oil
  • 1/4 Cup Fresh cream
  • 1 No. each Clove/Cardamom/Cinnamon Each
  • 1 Tsp Salt

Base gravy

Instructions
 

  • For preparing base gravy, take a pan, add oil or ghee and add listed ingredients mentioned above. Saute well and allow to cool.
  • Now grind the mixture to a fine paste. Keep this aside.
  • Boil water and add palak(spinach), leave for one minute. This is called blanching.
  • Now remove from the water and strain palak in a bowl.
  • Now mix the greens with some ice cubes in a bowl. This step is done so that the green color is not reduced.
  • Now stir in the palak mixture into a mixer grinder and add green chili and grind well. Keep this aside.
  • Next, take a pan, add oil and butter. Toast paneer cubes and remove from pan and keep aside.
  • In the same pan, add a clove, a cinnamon and a cardamom seed.
  • Now add the base gravy paste and cook for a few minutes
  • Now add green paste and mix well.
  • Now add fresh cream. It makes little change in colour. Stir well and add toasted paneer.
  • Now cook for five minutes and turn off the flame.
  • Now it's ready to serve Palak Paneer
