Instructions
  1. Mix rava and maida.
  2. Add water to make a tight dough.
  3. Make large chappathis using this dough and cut out small round shapes from it.
  4. Deep fry these in oil till they become crisp.
  5. Soak tamarind in water for 3 mins. Extract the juice and keep it aside.
  6. To make the sauce, grind together mint leaves, coriander leaves, salt and green chillies into a thick paste.
  7. Mix the ground paste with the tamarind extract.
  8. Boil potatoes and cut them into small pieces (Do not mash).
  9. Mix some salt and red chilly powder on the potatoes and fry in oil.
  10. While serving, make a hole inside each puri and place some amount of sauce inside it along with a potato piece.

Sweet chutney also has to be made. That is with dates- 1 packet, tamrind – small quantity, red chilly – 2, jaggery – small piece, grind it together with a little water. This can also be stored for future use. Also add 1 spoon badisop and ginger in the other mint water

to make the poori knead the dough in soda water. the result is excellent u get real crispy and puffed up pooris. (soda water – commerical canned drinking soda)

But the puris get flat, it gets saugi after few minutes. It doesn`t turn out like the real puri`s available in store or the vendors who sell in India.

Adding thin rava to the maida whilemaking dough makes puris to retain their crispness. Thou it makes rolling the puris a bit difficult but worth the effort 🙂
