to make the poori knead the dough in soda water. the result is excellent u get real crispy and puffed up pooris. (soda water – commerical canned drinking soda)
Adding thin rava to the maida whilemaking dough makes puris to retain their crispness. Thou it makes rolling the puris a bit difficult but worth the effort 🙂

But the puris get flat, it gets saugi after few minutes. It doesn`t turn out like the real puri`s available in store or the vendors who sell in India.
