Pani Puri North Indian dish - Gol gappa For puris:-1 cup Maida (Flour)1 cup Semolina (Rava)Baking powder (A pinch)Salt (As reqd)Water for mixingOil for fryingFor pani:-Tamarind (A lemon sized ball, Puli)15 nos Dates (soaked in water)2 tbsp Jaggery powdered (Sharkkara)2 sprigs Coriander leaves2 sprigs Mint leaves (Pudhina)2 tsp Cumin powder (fried and powdered, Jeerakam)1 tsp Chilly powder3 cups WaterFor Filling:2 cups Mashed potato1 tsp Cumin powder1/2 cup Onion (Finely chopped)1 tbsp Coriander leaves1 tsp Chaat masala1/2 tsp Pepper powder1/2 tsp Red chilly powderAs reqd Salt For making puris:- Mix together all the ingredients to make a smooth dough. You can also add 1 tbsp oil(optional) to the mixture for smoothness.There is no need to beat the dough.Make chapathis out of it and cut out very small round puris approximately 3 - 4 cm diameter.Heat oil in a kadai.Gently drop the puris. Gently press the puris so that it swells into a single bubble.Keep the fire slow and keep on turning the puris till its golden crisp.Take out pooris and drain on paper.For making the filling:- Mix together all the ingredients given adding enough salt to taste.Heat it gently and keep aside.For making the pani:- Put all the ingredients into a blender and blend well.:- Check for the taste. It should be a mixture of sweet, sour and chilly.For making pani puris:- Make a hole in the centre of the puri and first put some filling.Dip in pani and have. SnackNorth Indian

The poori recipe is excellent!!! Every poori rose up and were crispy. Thanks a lot fr ur contribution. I never try unrated recipes but took a chance this time. It was worth it. Cant vouch for the pani recipe as i made it from another recipe.
