For puris:-
For pani:-
  • Tamarind(A lemon sized ball, Puli) -
  • Dates(soaked in water) - 15 nos
  • Jaggery(Sharkkara) - 2 -
  • Coriander leaves - 2 sprigs
  • Mint leaves(Pudhina) - 2 sprigs
  • Cumin(fried and powdered, Jeerakam) - 3 tsp
  • Chilly powder - 1 tsp
  • Water - 3 cups

Instructions
  1. For making puris:- 1)Mix the ingredients to make a smooth dough.
  2. :- There is no need to beat the dough.
  3. Make chapathis out of it and cut out very small round puris approximately 3 - 4 cm diameter.
  4. Heat oil in a kadai.
  5. Gently drop the puris. Gently press the puris so that it swells into a single bubble.
  6. Keep the fire slow and keep on turning the puris till its golden crisp.
  7. Take out and drain on paper.
  8. For making the filling:- 1)Mix all the ingredients given, adding salt to taste.
  9. Heat it gently.
  10. For making the pani:- 1)Put all the ingredients into a blender and blend well.
  11. :- Check for the taste. It should be a mixture of sweet, sour and chilly.
  12. For making pani puris:- 1)Make a hole in the centre of the puri and keep the filling.
  13. Dip in pani and have.

The poori recipe is excellent!!! Every poori rose up and were crispy. Thanks a lot fr ur contribution. I never try unrated recipes but took a chance this time. It was worth it. Cant vouch for the pani recipe as i made it from another recipe.
