  • Basmati rice(washed, drained and kept for 20 minutes) - 2 cups
  • Moderately sweetened dried papaya cubes(soaked in 1/2 cup warm water) - 1 cup
  • Dried apricots(soaked in 1/2 cup warm water, diced) - 6 nos
  • Onion(sliced) - 1 no
  • Ginger - 1 tsp
  • Hot Vegetable stock - 4 cups
  • Bay leaf - 1
  • Green cardamon pods - 4 nos
  • Cinnamon stick - 1 no
  • Ghee/Oil - 1/4 cup
  • Salt(As reqd) -
For garnishing:
  • Cashew nuts - 1/4 cup
  • Onions(finely sliced) - 1/2 cup

Instructions
  1. Heat ghee in a pan, add cinnamon, cardamom, bay leaf and fry for a minute.
  2. Add onions, ginger and stir till the onions are soft.
  3. Add the soaked papaya and apricots and stir till the water has evaporated.
  4. Put the rice grains and stir fry for 2 minutes till the grains are blended with the fruits.
  5. Add the hot stock and salt and bring the contents to a boil. Cover and cook in low heat till all the water has evaporated and this will take about 15 minutes.
  6. Heat oil in another pan and fry the onions till golden brown, drain and then fry cashew nuts.
  7. Sprinkle them on the prepared rice.
  8. :- Papaya And Nuts Pulao is ready!! :- Serve the Papaya And Nuts Pulao hot!!!
