Papaya And Nuts Pulao

Rice Cooked with dried papaya and vegetable stock

Ingredients
  

  • 2 cups Basmati Rice washed, drained and kept for 20 minutes
  • 1 cup Moderately sweetened dried papaya cubes soaked in 1/2 cup warm water
  • 6 nos Dried apricots soaked in 1/2 cup warm water, diced
  • 1 no Onion sliced
  • 1 tsp Ginger
  • 4 cups Hot Vegetable stock
  • 1 Bay leaf
  • 4 nos Green cardamon pods
  • 1 no Cinnamon stick
  • 1/4 cup Ghee/oil
  • Salt As reqd

For garnishing:

  • 1/4 cup Cashew nuts
  • 1/2 cup Onions finely sliced

Instructions
 

  • Heat ghee in a pan, add cinnamon, cardamom, bay leaf and fry for a minute.
  • Add onions, ginger and stir till the onions are soft.
  • Add the soaked papaya and apricots and stir till the water has evaporated.
  • Put the rice grains and stir fry for 2 minutes till the grains are blended with the fruits.
  • Add the hot stock and salt and bring the contents to a boil. Cover and cook in low heat till all the water has evaporated and this will take about 15 minutes.
  • Heat oil in another pan and fry the onions till golden brown, drain and then fry cashew nuts.
  • Sprinkle them on the prepared rice.
