Ingredients
  

  • 1 lt Milk
  • 2 cups Fresh cream
  • 8 tbsp Sugar
  • 1 heaped Agar agar powder
  • 1 pkt Marie biscuits
  • 1 tsp Peppermint essence
  • Green food colouring A few drops
  • 2 tbsp Powdered sugar
  • 1/2 bar Peppermint Crisp chocolate crushed
  • Mint sprigs A few, Pudhina

Instructions
 

  • For preparing Peppermint Faluda Dessert, first crush marie biscuits finely in a food processor or with a rolling pin.
  • Spread over the base of a casserole dish.
  • Sprinkle lightly with a little of the milk.
  • Mix together 1/4 cup of milk and agar agar powder. Set it aside.
  • Place remaining milk and 8 tbsp of sugar into a heavy based saucepan and bring to boil, stirring often.
  • Once it begins to boil, add agar agar mixture and cook for a minute, stirring all the time.
  • Remove from heat.
  • Add 1 cup of the fresh cream, the essence and enough colouring to tint the mixture a pale green.
  • Leave to cool at room temperature, till mixture just starts to thicken (this may take almost an hour).
  • Gently place ladle fulls of mixture over the biscuit taking care that the biscuit mixture does not float to the top.
  • Refrigerate for a few hours.
  • Once it has set, whip remaining cream with powdered sugar, till stiff.
  • Pipe cream attractively over the dessert and sprinkle with crushed peppermint crisp chocolate and mint springs.
  • :- Serve Peppermint Faluda Dessert chilled.
  • :- You can make this any flavour you want and change the colouring accordingly. For example, use raspberry or strawberry essence and tint the mixture pink instead of green!
