Podi Payasam or kheer made with rice is one of the special desserts made in Kerala using coconut milk and jaggery. This is served in temples as 'nivedyam' too. It is a tasty and delicious recipe. It is simple and easy to cook. It is good for infants and kids.

Ingredients
  

  • 1.5 litre Milk
  • 4 tbsp Rice flour
  • 1 cup Grated jagerry adjust according to ur choice
  • 1 / Cardamom powder
  • 2 tbsp Ghee
  • A pinch of salt
  • Cashew / Raisins for garnishing

Instructions
 

  • For preparing Podi Payasam , firstly heat the milk in a pan.
  • Take some hot mik and mix rice flour with it.
  • Add this mixture into the milk and stir well . Cook it for 3-5 minutes on medium flame. Add a pinch of salt also.
  • In a pan, add 1 / 2 cup of water and add grated jagerry, melt it to form a thick syrup.
  • Filter this jiggery syrup and pour it into the rice flour mixture. Stir it well. Add cardamom powder.
  • Add 1 tbsp of heated ghee on top of the payasam.For garnishing, heat ghee in a pan, roast cashews and raisins.Drop it on the payasam.
  • Podi Payasam is ready to serve. Serve it hot or cold . it can also be served by sprinkling some cooked puttu powder on the payasam.
