Firstly, take the rice flakes in a flat plate and sprinkle luke warm water lightly.
Make sure it is not overly soaked or else it will get pulpy.
In a pan, heat oil and splutter mustard seeds. Add onions, green chillies and saute. When it turns golden brown, add the peanuts and cooked potatoes and saute.
Add salt to taste. Now add the soaked rice flakes and stir carefully. You may sprinkle more water if required.
In some versions of this recipe, I have seen tomatoes as well. But I normally don`t add them as my husband doesn`t like it. Serve hot. You can garnish with coriander leaves and sliced lime.
