Instructions
  1. For preparing the delicious sambar, first cook toor dhal in pressure cooker nicely. Mash it and keep aside.
  2. Cut onion, potato and other vegetables in large wedges.
  3. In a deep pan or any vessel put some ghee/oil and saute onion till brown.
  4. Add tomatoes now and stir until it is soft.
  5. Add turmeric powder, chilly powder and stir adding some more oil.
  6. Now add the rest of the vegetables and stir well until the vegetables are coated with oil and the spices. Now add the cooked dhal with little water and salt. Mix well and cook covered until the vegetables are cooked. Add water and stir occasionally.
  7. Now add tamarind paste, some more water(make sure not to add too much water), salt if required, sambar powder and let it boil.
  8. You can taste now and add more sambar powder or salt if required. As it boils, add the jaggery piece and mix well. Add cilantro/coriander leaves and season with curry leaves and mustard. Set aside.
