Potatoes Thai Style

Potatoes cooked in coconut milk with lime and corriander

Ingredients
  

  • 1 no Onion chopped
  • 1 no Garlic pod crushed
  • 1 no Red chilly chopped
  • or
  • 1/2 tsp Chilly powder
  • 500 gm Potato peeled and cut into chunks
  • 400 ml Coconut milk
  • 375 gm Stock vege or chicken
  • 1/2 cup Fresh coriander chopped
  • 1/2 tbsp Fish sauce
  • 1 no Lime rind
  • 1 no Lime

Instructions
 

  • 1)Saute onion and garlic in a fry pan on low heat, until onion is tender. 2)Add chilly, lime juice and potatoes. 3)Cook for 1 minute. 4)Add rest of ingredients. 5)Simmer for 10 - 15 mins, until potatoes are tender. 6)Remove to a serving plate. 7)Simmer the sauce, until sauce thickens. 8)Pour it over potatoes.
