  • Ripe pumpkin(chopped small) - 1/2 kg
  • Jaggery(powdered, Shakkara) - 1 cup
  • Coconut(grated) - 1 cup
  • All purpose flour(Maida) - 1/2 cup
  • Wheat flour/Aata - 1/2 cup
  • Rice flour - 1/2 cup
  • Cardamom(powdered, Elakka) - 2 tsp
  • Cashew nuts(chopped finely) - 15-20 nos
  • Food colouring(A pinch) -
  • Salt(A pinch) -
  • Oil(As reqd) -

Instructions
  1. For preparing pumpkin delights, heat water in a pot. Put in the pumpkin. Boil till it becomes soft and cooked.
  2. Drain the water and cool.
  3. Grind the pumpkin in a mixer grinder.
  4. Take a bowl, add grated coconut, jaggery, cashew nuts and ground pumpkin. Mix well.
  5. Take another bowl and add food coloring, cardamom powder, maida, wheat flour, salt and rice flour. Mix well with a little water to make a thick batter avoiding lumps
  6. Make balls out of the pumpkin mixture.
  7. Heat oil in a pan and dip the pumpkin balls in the thick batter and deep fry it.
  8. Fry till they become golden brown in colour.
  9. Pumpkin delights are ready to be served.
  10. Note:-A very sweet and healthy treat for all ages.
