Take a bowl, add grated coconut, jaggery, cashew nuts and ground pumpkin. Mix well.
Take another bowl and add food coloring, cardamom powder, maida, wheat flour, salt and rice flour. Mix well with a little water to make a thick batter avoiding lumps
Make balls out of the pumpkin mixture.
Heat oil in a pan and dip the pumpkin balls in the thick batter and deep fry it.
Fry till they become golden brown in colour.
Pumpkin delights are ready to be served.
